- 1kg skinless chicken breast cubed
- 1/2 cup seasoned fresh wholemeal bread crumbs
- 2 tbsp grated low fat parmesan cheese
- 1 egg white
- In a resealable bag combine breadcrumbs and parmesan cheese.
- In a shallow bowl, beat the egg white. Dip cubed chicken pieces in egg white, then place in breadcrumbs and shake to coat.
- Place coated chicken pieces in an oiled baking dish.
- Bake uncovered, at 180c for 15 mins, or until no longer pink, turning once.
- Serve with vegetables or salad.
