Tender Chicken Nuggets


  • 1kg skinless chicken breast cubed
  • 1/2 cup seasoned fresh wholemeal bread crumbs
  • 2 tbsp grated low fat parmesan cheese
  • 1 egg white


  1. In a resealable bag combine breadcrumbs and parmesan cheese.
  2. In a shallow bowl, beat the egg white. Dip cubed chicken pieces in egg white, then place in breadcrumbs and shake to coat.
  3. Place coated chicken pieces in an oiled baking dish.
  4. Bake uncovered, at 180c for 15 mins, or until no longer pink, turning once.
  5. Serve with vegetables or salad.
