Cucumber Salad


  • 1 peeled and diced cucumber
  • 1 onion, finely chopped
  • 2 tsp fresh mint, chopped
  • 4 tbsp low fat natural yogurt
  • Pepper to taste


  1. In a large bowl add cucumber, onion and mint.
  2. Stir in yogurt and mix well.
  3. Season with pepper to taste and serve.

Handy Tip

Cucumber salad works well with a curry meal because it is cool against the heat of a curry.
