Bacon & Pea Potato Cakes


  • 700g potatoes
  • 2 cloves garlic, chopped
  • 200g middle bacon, diced
  • 4 spring onions, chopped
  • 1/2 cup breadcrumbs
  • 1 cup frozen peas
  • 1 tablespoon mustard
  • 1/2 cup plain flour
  • 2 tablespoons olive oil
  • Salad to serve


Boil potatoes with garlic in water until soft, Drain and roughly mash, keeping some chunky potato, cool. Cook bacon in frying pan for 5 minutes until browned. Stir in spring onions, then cool. Add bacon mix, peas, breadcrumbs and mustard to potato mixture once cooled and mix well. Shape mixture into 8 patties, place on baking tray and place in the fridge for 30 minutes. Lightly coat patties in flour. Heat oil in frying pan and fry patties for 2—3 minutes each side until golden. Serve with salad. Serves 4-6.
