- 2 cups wholemeal flour
- 1 tablespoon baking powder
- Pinch salt
- 1 egg, lightly beaten
- 1 cup low fat milk
- 1/4 cup melted margarine
- 2/3 cup grated low fat cheese
- Combine flour, baking powder and salt in a bowl. Mix egg, milk and butter together and stir into flour just until moistened. Fold in cheese.
- Fill greased or paper lined muffin tray with mixture, do not overfill.
- Bake at 180c for 20-25 mins or until golden brown. Serve warm with a tomato relish.
