Kangaroo Tails

Ingredients

  • 2 large kangaroo tails, sliced
  • 2 tablespoons olive oil
  • 4 onions, chopped
  • 4 carrots, chopped
  • 4 cloves garlic, crushed
  • 4 litres stock or water
  • 6 cans crushed tomatoes
  • 1 tablespoon tomato paste
  • 3 tablespoons mixed herbs
  • 2 tablespoons sugar
  • 1/2 cup green beans
  • Salt and pepper
  • Pasta or mash potato to serve

Method

Heat oil in large pan and fry onion, add garlic and cook for 2-4 minutes. Add kangaroo pieces and brown. Add stock or water to pan, add carrots, tomatoes, beans and tomato paste. Stir in herbs and season with sugar, salt and pepper. Simmer for about 3 hours. Serve with Mashed potato or pasta. Serves 4-6.
