- 1 peeled and diced cucumber
- 1 onion, finely chopped
- 2 tsp fresh mint, chopped
- 4 tbsp low fat natural yogurt
- Pepper to taste
- In a large bowl add cucumber, onion and mint.
- Stir in yogurt and mix well.
- Season with pepper to taste and serve.
Cucumber salad works well with a curry meal because it is cool against the heat of a curry.
