Coleslaw

Ingredients

  • 1/2 cabbage finely shredded
  • 1 capsicum, finely chopped
  • 1 onion, finely chopped
  • 2 carrots peeled and grated
  • 1 red apple, finely chopped
  • 1 green apple, finely chopped
  • 2 tsp lemon juice
  • 3 tbsp low fat mayonnaise
  • 3 tbsp low fat milk
  • 1 tsp sugar

Instructions

  1. In a large bowl add cabbage, capsicum, onion and carrot.
  2. In a small bowl toss apples into lemon juice to prevent browning and add apples to the vegetables.
  3. Mix together the mayonnaise, milk and sugar in a cup to form a dressing and stir into coleslaw mixture and serve.
