Bean & Sausage Hotpot


  • 8 thick beef sausages
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 2 x 400g cans chopped tomatoes
  • 140g tomato paste
  • 400g can butter beans


Heat oil in a large pan over medium heat, cook sausages for 8 minutes until browned, remove from pan and set aside. Add onion and garlic to pan, cook stirring for 2 minutes until soft. Return sausages back to pan, tomato paste and tomatoes. Rinse and drain beans and add to pan, cover and cook over low heat for 20-30 minutes. Serve. Serves 4-6.
