Baked Barra & Vegetables


  • 4 x Barra fillets
  • 2 zucchinis, cut into wedges
  • 2 red onions cut into wedges
  • 3 tomatoes cut into wedges
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice


Pre-heat oven to 200°C. Place 1 tablespoon of oil in a bowl and toss the vegetables to coat, place vegetables into an oven proof baking dish. Use another tablespoon of the oil and brush the fish on both sides, place fish on top of the vegetables in the baking dish. Place in the oven and bake for 30 minutes. Whisk together the remaining oil, garlic, lemon juice and mustard to make a dressing. Divide the fish and vegetables onto plates, drizzle over the dressing and serve. Serves 4-6.
